This wine exhibit a pronounced minerality, featuring distinctive flinty notes that are synonymous with Chablis wines. Côte de Jouan benefits from its robust structure, which is harmoniously complemented by its lively acidity, contributing to its improvement with the passage of time.

Indigenous yeast fermentaion and natural malo in barrels. Aged for 11 months before blending, then aged in stainless steel vats for an additional nine months. No filtration, no fining. Limitation of all pumping, as gravity is preferred,
