West Cork Maritime Sherry Cask Irish Whiskey

West Cork Maritime Series Sherry Cask Whiskey is a richly expressive Irish single malt shaped by Oloroso cask influence and the rugged maritime heritage of West Cork. Matured first in bourbon casks before a characterful sherry finish, it delivers layers of dark fruit, toasted nuts and warming spice. Presented in an extraordinary fishing-float-inspired bottle, it is equally compelling for collectors, gifting and slow evening sipping. Tasting Notes & Experience

Deep amber in the glass, this beautifully textured single malt opens with sun-baked figs, plump raisins and dark prunes, softened by warm vanilla and the vinous richness of sherry-seasoned oak. The palate is smooth and generous, bringing dark forest fruits and malt together with toasted almonds, creamy caramel and seasoned oak. A long, warming finish gradually turns elegant and dry, leaving lingering notes of sweet spice, fruitcake and fine tannins. Key Details

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Denis McCarthy and Ger McCarthy, beginning modestly in Union Hall with two small stills and little more than determination and curiosity. Denis and Ger had previously worked as fishermen off the West Cork coast, an experience that continues to shape the identity of the distillery today. Now based on a substantial site in Skibbereen, West Cork remains independently and wholly Irish owned, with an unusually hands-on approach to production. A portion of its barley is malted in-house, while locally sourced grain and pure Irish water form the foundation of the spirit. Triple distillation takes place slowly through copper pot stills to maximise copper contact and refinement, followed by maturation and finishing regimes designed to add flavour without overwhelming the underlying malt character. Every whiskey is bottled non-chill filtered and without artificial colouring, preserving natural texture, aroma and colour. Special Features

The Maritime Series is a deeply personal tribute to the founders’ connection with the Atlantic. Its most striking feature is the bespoke spherical bottle, conceived as a contemporary interpretation of the vintage glass fishing floats once used by fishermen along the coast. The tactile rounded form and deliberately off-centre pouring spout give the bottle an unmistakable presence, making it a particularly memorable choice for gifting or display. Inside, 100% malted barley and traditional triple distillation create a smooth yet characterful single malt, while non-chill filtration and the absence of added colouring retain a fuller texture and naturally rich amber appearance. Together, the distinctive presentation and authentic production philosophy give the Maritime Series a sense of place and personality that goes well beyond conventional Irish whiskey packaging. Ageing & Maturation

The whiskey begins its maturation in first-fill ex-bourbon casks, developing layers of vanilla, gentle sweetness and softly charred oak. It is then transferred into sherry casks sourced from Bodegas Barón in Sanlúcar de Barrameda, where the finishing period introduces the expression’s defining richness. Dried figs, raisins and prunes mingle with toasted nuts, spice and seasoned oak, creating a layered single malt in which the warmth of bourbon maturation meets the deeper, vinous character of Spanish sherry wood. Recognition & Accolades

As a distinctive limited-edition expression, the Maritime Series Sherry Cask is still building its individual awards history, but early recognition has already highlighted both the whiskey and its remarkable presentation. It also comes from an acclaimed independent distillery whose wider Irish whiskey portfolio has earned numerous international medals and awards.

- Design Medal – Highly Commended – International Wine & Spirit Competition (2024)
- Bronze Medal – International Wine & Spirit Competition (2024)

Beyond the Maritime Series, West Cork Distillers has built an impressive international reputation, with Gold Medal-winning Irish whiskeys across its portfolio and recognition as Large Cork Company of the Year. For this relatively new expression, its early IWSC honours provide a promising beginning to an awards story that continues to develop. Cocktail Pairings
