EATING A New Zealand delicacy, Southern Rock Lobster (Crayfish) are wild-caught via pot off the Otago-Southland coast. They have a delicate, slightly sweet flavour with a salty ocean undertone and a meaty, dense texture. They are very moreish to eat. STORING Store in the freezer and defrost before cooking.
