EATING Gurnard is a medium-firm fleshed fish that holds together well in most cooking applications. Our Gurnard fillets are layer-packed and blast frozen. Skinless and boneless, they're packed in a handy 2kg box that easily fits in the freezer, or a larger 5kg carton.
STORING Store in the freezer until you're ready to use it. It's best defrosted in the fridge. If you're short on time, pop fillets into a sealed bag and submerge in water that's a bit cooler than room temperature. Change the water every 20-30 minutes and weight the fish down so it's fully submerged in the water (not bobbing about).
