Scientific name: Hericium novae-zealandiae

The Pekepeke-kiore (Coral tooth fungus) is bound to bring some magic and awe into the home and grow-rooms of more experienced mushroom growers. This edible fungi is a local New Zealand variety and, as the name implies, resembles delicate coral. It tastes great when cooked and has a distinctly sweet and umami flavour.
