The fruit was handpicked and selected for botrytis, then left on skins for several hours before whole bunch pressing. Daily tasting during fermentation was key to finding the balance of flavour between acidity and sugar.

Bright and concentrated citrus and floral notes with a layer of lusciousness that lingers on.

Sauvignon Blanc

Sauvignon Blanc was left to hang in the vineyard for an extended period before being handpicked. The fruit was whole bunched pressed and settled, then transferred to older barrels of fermentation and ageing for 4 years.

An explosion of spice, hazelnuts and dried fruit flavours. Luscious on the plate with a clean crisp finish.
