You will need
240 g Lemon Slice Mix (1 pack)
2 large eggs
100 g salted butter (cold)
3 Tbsp lemon juice
Zest from 1 lemon
Method
- Preheat the oven to 160°C (fan forced).
- In a bowl, rub the butter into the Lemon Slice Mix until combined and crumbly.
- Transfer half of the mixture to a lined 20 x 20 cm baking dish, pressing down firmly to form a flat layer. Bake for 15 minutes or until golden brown.
- To the remaining mixture, add the eggs, lemon juice, and lemon zest. Mix until smooth.
- Pour the mixture over the baked base and spread carefully. Bake for another 10–15 minutes, or until the top layer is firm.
- Allow to cool before slicing. Store in a cool, dry, dark place.
