Verdejo is Spain's answer to a zesty, aromatic white — citrus and cut grass, with a slightly bitter almond finish that keeps it from being simple. This one comes from Castilla-La Mancha under the Ojos del Guadiana label. Serve cold with grilled fish, goat's cheese or a plate of green olives.
