Butterfish is only found around the New Zealand coast. They are seldom found at depths greater than 15 metres.

Butterfish has a white, medium texture. It has a delicate flavour, translucent flesh and has a great ability to flake well and is very succulent with high iodine content. Butterfish is suited to most cooking methods.
