Made exclusively from the Itrana olive variety, it boasts an intense golden-green color with yellow reflections.
Very low acidity, typically between 0.11% and 0.15%, indicating its high quality. The polyphenol content is generally high, exceeding 500 mg/kg, which contributes to its antioxidant properties and longer shelf life.
The aroma is robustly fruity with notes of green olives, fresh herbs, artichoke, green tomato, and apple. Its taste is well-balanced, featuring bitterness and spiciness alongside flavors of green almond, celery, lettuce, and basil.
