Cascadia Fairtrade Organic is a carefully crafted blend of coffees from Honduras, Indonesia, and Ethiopia, designed to deliver a balanced cup without the caffeine. It's decaffeinated using the world-renowned Swiss Water® Process - a gentle, 100% chemical-free method that uses nothing more than pure water, temperature, and time to remove 99.9% of caffeine while protecting the coffee's unique flavour and aroma.

More about the Swiss Water Process
The process begins with the creation of Green Coffee Extract (GCE) - water infused with all the soluble flavour compounds found in coffee, but none of the caffeine. When fresh green beans are soaked in this solution, the caffeine naturally migrates out of the beans into the GCE, drawn by the difference in concentration, while the flavour compounds remain securely in place. The GCE is then passed through carbon filters that trap and remove the caffeine, and the refreshed solution is recirculated until the beans reach the desired level of decaffeination. Once complete, the beans are dried back to their original moisture level, ready to roast with all the rich character of their origin intact.
