San Ignacio, Peru sits high in the northern Cajamarca region, where the Andes ease into the Amazon Basin. In this fertile mountain landscape, smallholder farmers cultivate coffee at elevations between 1,600 and 1,800 meters, surrounded by dense forest and mineral-rich soils. Most are members of Cooperativa Agraria Frontera San Ignacio (COOPAFSI), a pioneering group founded in 1969 that supports organic and Fair Trade farming, community development, and women-led initiatives such as Las Damas de San Ignacio. Their dedication to sustainable agriculture and careful cherry selection ensures exceptional quality from farm to export.

This naturally processed lot showcases a more adventurous side of San Ignacio. Ripe cherries are carefully sun-dried on raised beds, developing deep fruit complexity and layered sweetness. The result is a cup that bursts with notes of ripe berries, dried fruit, and berries, balanced by a syrupy body and lingering sweetness. It’s a vibrant expression of Peruvian terroir—proof that innovation and tradition can thrive together in the highlands of Cajamarca.
