We tried a dozen suppliers to find Brisket that wasn’t too fat or too lean – then we rub it with our own blend of herbs n spices, let the brisket absorb the rub for 12 hours – then we smoke & slow cook for 22 hours.
Result – fall apart tender with spectacular flavour.
