Finca Villa Betulia, nestled in the Acevedo region of Huila, sits at an elevation of 1,550 meters above sea level. Luis Anibal Calderón, a second-generation coffee farmer, has transformed this 20-hectare farm into a haven for exotic coffee varieties. Since acquiring the farm in 2005, Luis has dedicated himself to cultivating rare and high-quality coffees, including Geisha, Pink Bourbon, and the distinctive Papayo varietal.
The Papayo Varietal
Papayo is a rare Arabica mutation, believed to have originated in Acevedo, Huila. Its name derives from the elongated shape of its cherries, reminiscent of papayas. Genetic studies suggest a close relationship between Papayo and Ethiopian landrace varieties, contributing to its unique flavor profile.
Processing Method
The Washed Papayo undergoes a meticulous processing method to enhance its inherent qualities. Cherries are handpicked at peak ripeness, then floated and hand-sorted to remove defects. They are subjected to a 30-hour underwater fermentation, followed by gentle pulping. The parchment is then washed and dried in temperature-controlled conditions until the ideal moisture content is achieved.
