Meet Moises and Finca Las Cascaritas Moises Hidardo Hernandez is a fourth-generation coffee farmer and the founder of Cafés Especiales Mercedes Ocotepeque (CAFESMO). He inherited Finca Las Cascaritas from his father and now runs it alongside his mother, a third-generation coffee farmer herself. The farm spans 3.5 hectares in the Mercedes, Ocotepeque region of Honduras, sitting at an altitude of 1,250 meters above sea level. The diverse plant life on the farm includes pine trees native to the region, as well as banana, American walnut, and hazel pine.
The Pacas Variety The Pacas variety is a natural mutation of the Bourbon coffee plant, first discovered on the Pacas family's farm in El Salvador in 1949. It's known for its compact tree size and high yield, making it a favorite among farmers. But what sets it apart for us coffee lovers is its distinctive flavor profile, often featuring notes of red grapes, limes, and brown sugar.

Once that's done, the beans are spread out on African drying beds for about 15 days until they hit the perfect moisture content of 10.5 to 11.5%. This meticulous process enhances the coffee's natural sweetness and complexity.
