Pale straw green. Passionfruit and blackcurrant up front, with a tropical lift, and a crushed-herb note underneath that keeps it from tipping into sweetness. The palate is rounder and richer than most Sauvignon Blanc, and it finishes juicy and clean. At the table

Made for the start of a meal. Oysters, scallops or whitebait, a plate of goat's cheese, anything green and herby. The extra texture means it will also sit happily alongside a roast chicken, which is more than most Sauvignon Blanc can manage. Serve it cold but not ice cold, around 10°C, or you'll flatten the aromatics. Grown regeneratively
