Grown organically in Manutuke, the fruit shows purity and brightness from the start. A light wild ferment brings a flinty edge and subtle savoury spice, adding interest without losing clarity. Aromas of ripe green pear, spice and mineral tension give way to a palate that’s crisp, just-dry and lightly textural.
