Cortese is grown in the hilly territory between Alessandria and Asti that extends to the Ligurian Apennines. The soils are calcareous, clayey, with a mixture of tuff‑ and siliceous stones. Perfectly ripe grapes are hand harvested in mid-September. Temperature-controlled fermentation in stainless steel tanks preserves the elegant white flower fragrance and purity of the variety.
