A crisp, fresh Methode with obvious yeast notes and the minerality typical of our limestone terroir. A more layered and ‘sophisticated’ style than our more fruit-forward Cuvee II Methode. A truly ‘hand-made’ wine – hand-picked grapes, hand-bottled, hand-riddled, hand-disgorged and hand-labelled. This wine has had 4 years on yeast lees.
